Allow the pan to heat and then add cumin seeds. Let the seeds be fried partially. Add the cauliflower (chopped) to the pan. Keep stirring for 2 minutes. Gently add salt, turmeric powder and chilli powder and continue stirring for one more minute. Now, close the pan with a lid to allow the cauliflower to cook and become soft. Every 4-5 minutes, lift the lid, stir the mixture and close it. Cut the brinjal, carrot, onion and cauliflower in your favourite size and shape. Chop the green chillies in small sizes though. Take a soup pot or any vessel i.e. available. Add 2 spoons of olive oil and leave the pot in sim mode. Add cumin seeds, cloves, ginger and garlic. After one minute, add the green chillies and once they turn a bit brown, add the vegetables too. Keep stirring them for about 2 minutes. Then, add water to the pot. Keep stirring and gradually add salt, paprika powder, cinnamon powder, basil and coriander leaves. close the pot for about 10 minutes and leave it in medium heat. This will allow the vegetables to cook inside. Open the lid and continue stirring. Aroma coming from the soup soon transfuses through the kitchen. Close the lid and open every ten minutes to stir for another 20 minutes. Then soup is ready to serve.

This soup is apt under cold weather conditions and when you have cold/sore threat, etc

- Posted using BlogPress from my iPad

<georss:box>12.936679000000002 80.0916545 13.184165 80.4075115</georss:box>

Chocolate Ice cream cake

<table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; Place one slice in the middle on the bowl in the base, then place another next to it. Continue until the whole inside of the bowl is lined. Squash the Swiss roll slices slightly together so that there are no gaps between them. When you reach the top of the bowl, cut slices in half if a whole one does not fit.

Use a pastry brush to dab the sponge with the alcohol. Spoon the ice cream into the lined bowl, squidging it down so that it is completely full. Now place the cake in the freezer and leave overnight or at least until the ice cream is completely firm.

Once the ice cream is firm, carefully remove the cake from the bowl using the clingfilm to help you. Ease it very gently out of the bowl with the clingfilm. If it is too hard to remove, warm the bowl up a little in your hands or by carefully running a flat blunt knife between the bowl and the clingfilm. When the cake is loose in the bowl and feels as if you could pull it out easily, place a large serving plate on top of the bowl and turn the bowl upside down, so that the plate is the right way up. Carefully remove the bowl and peel off the clingfilm.

<span class="Apple-style-span" style="color: #333333; font-family: Georgia, 'Times New Roman', serif; But, day before yesterday morning, I was very hungry and hence decided to treat myself to a sumptuous lunch. The first thing which came to my mind was Pav Bhaji. So, looked up on the Internet for the recipe as was not sure of the entire procedure.
Cooked it but unfortunately made so much that am having it for the last 2 days and still have some left for tomorrow. Taste - Housemate liked it and she said yummy was not the word. The purpose of my visit was to meet and have a discussion with my MBA classmate. Once the discussion got over we then went to an Indian store to purchase grocery. At that time, my classmate adviced me to pick up the instant Palada mix and a litre of milk and prepare it after getting back home. He also asked me to give a feedback on how tasty the Palada was. So I went back home, prepared the PALADA, tasted it and then immediately sent him a message thanking him for his advice. Had he not adviced me, I probably would have ended up not knowing about this special and famous sweet of Kerala(India). The internet says that Palada is prepared mostly during the Onam festival which is celebrated in Kerala.
Futhermore, my classmate's girlfriend suggested the sweet to be refrigerated to get a better taste. So that evening I refrigerated the sweet. The next day I ate it and found it to be very tasty and delicious.
Hence I thank my classmate for letting me know about this sweet. Moreover, I can prepare this sweet as a dessert for my future guests.

spicy noodles

1 packet chicken noodles (TESCO 8p)

Veggies:
1/2 yellow peppers
1/2 red peppers
1/2 green peppers
2 carrots
4 mushrooms
3 baby potatoes
few slices of cauliflower

Cut all the veggies finely and allow them to boil for 15 minutes on high mode
Simultaneosly boil the noodles for ten mintutes

Once both are boiled, take a pan and add the boiled noodles. Once the vegetables are boiled, put them in a strainer for the water to be strained and the vegetables to be cooled.

In the meantime the rice would have been cooked as well. Take the rice and place them on a plate and spread it even. This would cool down the rice.
Take a pan, add 1 spoon of ghee. Then add a little bit of panch puran and few cloves. Also, add the chopped onions and spring onions and fry them for 3 minutes (medium heat). Now, add 2 spoons of chilli powder and 1 spoon of ginger garlic paste. Sprinkle some water to make the masala a little bit loose. Keep stirring for 3 minutes. Then add the rice to the masala. Stir for 2 minutes. Now, add the vegetables to the mixture. Keep stirring for 2 mins. Now, add salt to taste. Stir for 2 mins. You may add a little bit of water if you wish to. Cover the pan with a lid for 3 minutes. Open the lid and stir for 2 minutes.
Vegetable fried rice is ready.

Preparation time – 30 mins

Kesari

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://3.bp.blogspot.com/_KCk_JfKyVrU/Scz8feXre0I/AAAAAAAAHPg/XI1S9cg-TCQ/s400/26032009573.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5317902877676239682" />

Ingredients required:

a) Ghee
b) Water
c) Sugar
d) Kesar powder
e) Cashews and badams
f) Saffron
g) Rava

Preparation:

Take a bowl and add 3 glasses of water. After 3 minutes you may find that the Kesari has turned orange/red in colour.

Kesari is ready.

Suggestion - Eat it when hot.

Preparation time – 20 minutes.

Vegetable subzi with paneer

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="http://2.bp.blogspot.com/_KCk_JfKyVrU/SdFww-XvFDI/AAAAAAAAHQY/AXh4BbFUMu0/s400/30032009637.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5319156621579850802" />

Ingredients required:

Tomatoes
Onions
Spring Onions
Green chillies
Oil
Cabbage
Sweetcorn
Mushrooms
Beans
Paneer (cottage cheese)
Potatoes + Peppers (optional) - Never used in this preparation
Salt - to taste
Chilli powder
Turmeric powder
Garam masala
Coconut milk
Panch puran

Preparation:

Cut all the veggies (cabbage, onions, spring onions, beans and green chillies), paneer and mushrooms
Boil the cabbage, sweetcorn, beans and mushrooms. Once boiled, strain the water and keep the veggies ready.
Take a pan and add 2 spoons of oil. Add 1 spoon of Panch puran. After few seconds, add the onions, spring onions, green chillies and paneer. Allow the onions to turn brown in the process allowing the paneer to turn a bit brown (basically fried) too. Now add the boiled vegetables and stir for 1 minute. You may add 2 spoons of chilli powder, 1 spoon of turmeric powder and salt to taste. Now, keep stirring for 2 minutes. Add 2 spoons of coconut milk. The mixture might look little bit watery because of adding coconut milk. It is OK. Keep stirring for a minute. Take a lid and close the pan. After 2 minutes, remove the lid, add 1/2 a spoon of garam masala and continue stirring. Close the lid and leave the mixture to cook for 2 minutes. Remove the lid after 2 minutes and continue stirring. The subzi is ready now.

You have to cook at medium heat throughout the preparation.

Preparation time - 25 minutes

Suggestion - Eat with rotis

Sweetcorn masala

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="http://4.bp.blogspot.com/_KCk_JfKyVrU/SdKo9N0Xw_I/AAAAAAAAHQg/PLSNBqRdV84/s400/31032009638.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5319499879512785906" />
Last evening, there was no vegetables and my hunger was increasing by the minute. Returning from work, this brilliant idea struck me. Thought it would be a great option to cook something with what minimal resources. So, decided to make Sweetcorn masala (name given by me). Went to Madhav's and got myself a packet of rotis.
Only the masala had to be prepared.

Preparation is very easy and quick.

Ingredients:

Oil
Panch puran
Chilli powder
Turmeric Powder
Salt to taste
Sweetcorn
Ginger garlic paste
Kissan Sweet chilli sauce (optional)
Coconut milk
Tomato
Onions

Preparation:

Chop the onions. Take a pan and add 2 spoons of oil. Now add the panch puran and onions. Within seconds, add the tomato (minced) and coconut milk. The mixture will look like a liquid. It is OK. Now add the sweetcorn, 2spoons of chilli powder,1 spoon of turmeric powder and salt to taste. Add 1 spoon of ginger garlic paste. Keep stirring the mixture for 5 mins. Take a lid and close the pan. Every 3 minutes remove the lid, stir the mixture and close the lid again. This process should be for 9 mins.

After that open the lid and the masala is ready. The masala was really nice and am not exaggerating. Had the masala with 4 rotis.

Preparation time - 15 minutes

Sweet chilli sauce may be used after adding ginger garlic paste.

Paneer Makhanwala

Firstly, apologies for being away from blogging as was busy with work and quite a lot of things. Last night, a glass of baileys made me not only sleep well but also wake me up early. Me and my housemate had a feast last night and it was all because of me who decided to cook some nice dinner after a dull day's of work.

What did I decide to cook? Did not have a bloody clue as my brains were fried. So, just google searched for paneer (cottage cheese) recipes. Found many, so decided to prepare two of them. And one of them was the following (in pic).

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="http://4.bp.blogspot.com/_KCk_JfKyVrU/Sdr-rGM3r9I/AAAAAAAAHQ4/FlEAstTqSF8/s400/06042009651.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5321845926044086226" />

Ingredients:

250 gms Paneer
200 gms Fresh Cream (Malai)
200 gms Tomato Puree (Tamatar Ka Raas)
2-3 tblsp Butter
2 tblsp dried Fenugreek Leaves (Methi Ke Patta)
1/2 tsp Red chilli (Lal Mirchi) Powder
1/2 tsp Garam Masala Powder
2-3 Green chilli (Hari mirch)
As per taste Salt (Namak)

How to make paneer makhanwala:

* Melt the butter in a pan, add slit green chillies, tomato puree, kasuri methi, salt, red chilli powder and simmer for 4-5 minutes.
* Add the cream and garam masala powder and cook further for 2-3 minutes.
* Add the paneer pieces and cook for a minute.
* Serve hot garnished with coriander.

reference - http://www.indianfoodforever.com/vegetables/paneer/

Chilli Paneer

Last night, since me and my housemate decided to have bailey's Irish cream (liqueur), we prepared this wonderful starter. Thanks to mom for the recipe and also my friends who tasted and loved it.

Now, the best part. After preparing the bread stuff, decided to make something out of drinking chocolate. Came up with a new recipe and of my own.

Ingredients

Drinking chocolate
Castor sugar
Milk
Fresh cream
Wine (white)
Cappucino (if required)
Chocolate

Prep

Take a pan, add milk, castor sugar, fresh cream, cappucino and chocolate. The bread stuff is very simple to prepare.

Boil potatoes. Mash them after it is boiled.
Cut 2 onions and few green chillies.
Then take a pan, add oil and mustard seeds. Then add the onions, green chillies and the mashed potatoes. Add 2 spoons of turmeric powder, chilli powder and salt to taste. Keep stirring. within 7-8 minutes, the masala is ready. You do not need to be a super chef either.

Ingredients:
Carrot
Beans
Peas
Sweetcorn
Peppers (green and red)
Cauliflower (option)
Onion
Oil
Salt (to taste)
Chilli powder
Green chillis (2 or 3)

Vegetables - you may wish to use according to your preference and in line with the amount of spaghetti you want.

I used 75gms of Spaghetti and frozen vegetables (2 cups)

Boil the vegetables and spaghetti for 12-14 minutes. In the mean while, chop the onions and green chillis.
Once boiled, strain them and leave it to cool. In the mean time, take a pan.

Add 2 tsp of oil in the pan. Medium heat only
Add chopped onions and green chillis. After 2 minutes, add the vegetables and spaghetti to the pan. Add salt and chilli powder. Keep stirring.

Done! Enjoy eating.
